It is Monday, and that means I have another meatless Mondays meal to share.
Basil Pesto with Lemon on Ravioli
This is a great recipe for using the summer bounty of fresh basil. The recipe for the pesto is from one of my favorite sites, Kalyn’s Kitchen. Every recipe I’ve made from her site has been delicious. You can find the Basil Pesto with Lemon recipe here. The addition of freshly squeezed lemon juice gives this pesto an awesome bright taste. You won’t be able to stop eating until it is gone.
Last week I used the pesto on farfalle pasta – yum! This week I wanted to try something different, and the hubs picked ravioli. Stuffed with Pecorino and potato, it is perfect match for the pesto.

Other than making the pasta of your choice, there is no cooking involved. No hot kitchen in the summer!
