A Meatless Mondays Recipe
Zucchini Pie is a another great way to use up all the zucchini from your summer garden. My brother gave me this recipe years ago (don’t know the origin before that) and it is a family favorite. Quick and easy to throw together, Zucchini Pie is good hot from the oven, cold as an appetizer, and holds up under reheat (oven or microwave).
Preheat oven to 350 degrees. Grease a 9-10″ pie plate (butter, Pam, etc.)
3 zucchini sliced thin and quartered (skin on)
1 cup Bisquick
1/2 cup chopped onion
1/2 cup Parmesan cheese (I use freshly grated)
2 Tbs. chopped fresh parsley
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1/4 cup vegetable oil
dash garlic powder
Mix all ingredients together in a large bowl. Pour into greased pie plate. Bake at 350 degrees or until brown (about 40 minutes).
